Michelin-starred Chef to Launch Restaurant at Fulham Pier

A Michelin-starred chef has announced plans to open a restaurant in the Fulham Pier development which will be inspired by the inventor of Coronation Chicken.

Fulham resident, Adam Byatt, who got his star at Trinity in Clapham, is going to open Brasserie Constance, which is named after Constance Spry, the chef and florist, whose cookery books where hugely influential in the middle of the twentieth century in the UK.

There will be an à la carte menu and a set lunch with menus comprised of 'approachable, immaculately executed seasonal dishes' in line with the philosophy of Constance Spry.

The new venue will be on the second level of the development by Fulham FC’s Riverside Stand and will have a terrace as well as a private dining room which will also have a river view. The interior is being designed by Lazaro Rosa-Violán with a view to maximising the Thames vista.

There will also be a bar dubbed Flo after Constance Spry’s friend and assistant Florence Standfast, which will serve cocktails and wines from a list of 200 curated by the sommelier team at Trinity.

Mr Byatt became an apprentice chef at Claridges before moving onto the Berkeley Hotel and then working with ‘chef’s chef’ Phil Howard at The Square in Mayfair.

He was appointed head chef of The Worx – a contemporary restaurant set up inside a photographic studio in Fulham before opening Thyme in Clapham which was Time Out Restaurant of the Year 2003. Although this venture closed a few years later, he came back to Clapham with Trinity which specialises dishes using quality British ingredients and winning a Michelin star in 2016.

He told Restaurant magazine, "I'm delighted to be opening a third neighbourhood restaurant in South- West London. Having lived in Fulham for several years during my early career, it is an exciting full-circle moment to be bringing Brasserie Constance to life within such a landmark destination.

"Fulham Pier offers the perfect setting to showcase the very best of British dining, surrounded by stunning views of the Thames. I look forward to welcoming guests to this new space in 2025."

Fulham Pier director Glen Sutton added, "We are beyond thrilled to be working with Adam Byatt and his team. Brasserie Constance will combine inspiration from the incredible heritage of the area, alongside the warmth and hospitality of a great neighbourhood restaurant."
