"Pub everyone wants as their local" set to open on January 15

Waterford Road's Pelican pub is getting a major makeover and will reopen next month with a new name, the Tommy Tucker.

Chef Claude Compton, together with business partners George McCabe and Jim Morris, is aiming to create "the pub everyone wants as their local" when the Tommy Tucker opens on January 15 at 22 Waterford Road, on the corner of Moore Park Road near Fulham Broadway.

The team already runs Claude’s Kitchen at 51 Parsons Green, which was among London’s top five new restaurants of 2013, and the champagne bar beneath it, Amuse Bouche.

The new 80-seat venture will be partly food-driven, says the ex-Club Gascon and Petersham Nurseries chef, who learned his trade at the side of Michelin-starred mentors.

A new kitchen is being fitted this week at the Tommy Tucker, which takes its name from the Cockney rhyming slang for supper.

Plans include infusing the pub’s own gin and bourbon in barrels, to create different cocktails.

" The building was a pub beforE, but it hasn’t had any work done to it in about 30 years," says Claude, 29.

" Ultimately we aim for it to be the best version of what a traditional pub should be; a fun meeting place and the pub we would choose to drink in."

Fresh fish and locally sourced produce will lead the menu.

The format could be used as the template for further pubs if the venture proves a success.
