The Hole In The Wall To Become A Smokehouse

Chiswick gastropub reopens and plans big changes in January

The Hole In The Wall has reopened but it will be relaunched early next year as a Smokehouse - the second owned by the Noble Inns group, which has a branch in Islington. It will be called The Chiswick Smokehouse.

When refurbished and relaunched it will have a whiskey room and a smokehouse, a large outside grill for barbecuing, and a meat ageing room.

Owner Maria Hunter told chiswickw4.com that they reopened from 5 pm Thursday, serving pub food and welcomed the chance to get to know the people of Chiswick.

In January they intend to close for a few weeks to refurbish the premises and bring in the specialist equipment for the grilling and barbecuing.

She said the concept behind the Smokehouse was to offer something unique.

"When people think of barbecued meat they think of it coming American-style with lots of sauce. That's not what we're about. We will be concentrating on the smoking process, the different flavours of the meat, it's a more technical approach."

They cook, roast, grill, barbeque and smoke using sustainably sourced English oak- some of the dishes on offer at their Islington branch include Highland cow burger with Korean pulled pork, Shortrib bourguignon, Smoked lamb shoulder, with polenta, raclette & sambal. Fish dishes includes Cornish hake, smoked mussels & bacon chowder and vegetarian options include Blackened pumpkin, tahini, flatbread & dill.

She added that they used sustainable wood and sourced their ingredients from local suppliers and small wine farms.

The previous owners Jason and Lucie had run the gastropub for over ten years.
